What is the Food Handbook?
A publication by AIC (Italian Association of Celiac Disease) formed by a list of food belonging to categories potentially dangerous or absolutely banned for celiacs. This is transformed by the manufacturers into food suitable for celiacs thanks to the removal of gluten. The purpose of this publication consists in offering celiacs and subjects suffering from herpetiform dermatitis a further tool to avoid gluten. The manufacturers agreeing upon this protocol take part in drawing up the list by declaring the suitability of their products (sold in Italy) to be eaten also by celiacs (as the gluten, if present, is always less than 20 ppm), in terms of ingredients and contaminations during the production stages (storage, working, packaging etc.).
